Apple & Speculoos Pie


In my opinion, there is nothing better than apple pie. Nope. Don't even try it. You won't convince me. I do make some exceptions though. When you add something to that amazing apple pie for example. Behold: Apple & Speculoos Pie.


If you are still looking for an amazing Christmas recipe that will blow your family over, stop right here. This pie has everythin you need to make everyone happy instantly. I don't really know why I never thought about adding these two ingredients, but they are amazing! And they make your pie into a real winter pie too.


As you can tell from the title, you have to add speculoos. You just need to add some speculoos spices to the dough, but you could crumble some speculoos on top if you really love it. The second addition is my favourite, but I know quite some people are not really a fan of it: marzipan. The recipe actually calls for persipan, but since we couldn't find it in the supermarket, I decided to use marzipan, which is actually a lot better since persipan is the cheap version of it.


Although regular apple pie is already tha bomb, these ingredients really make it special. It is a delicious, wintery (is that a word?), cosy and simply amazing pie. So if you are getting a little bit stress about what to make as a Christmas dessert, just make this. Everyone will love you. And steal your pie.

Ingredients
for 1 pie, 10 slices
  • 1 egg, white and yolk apart
  • 400 grams (self-raising) flour + extra for dusting
  • 250 grams granulated white sugar
  • 2 tablespoons speculoos spices
  • 1/2 teaspoon salt
  • 250 grams cold butter
  • 150 grams persipan/marzipan
  • 7 apples
  • 2 teaspoons cinnamon
  • optional: 2 tablespoons apricot jam
Combine the egg white, flour, speculoos spices, salt and 200 grams of the sugar in a large bowl. Mix well. Add in the cold butter and mix it through with two knives until crumbly. Knead into a ball with two cool hands. Press a little flat, put into foil and put in the fridge for at least one hour.

Preheat the oven to 175°C/350°F. Dust your work surface and the dough roller. Roll out 2/3 of the dough into a 1 cm thick crust. Put it in a spring cake tin.

Lay out the persipan or marzipan on the dough. This is your base layer. If you want, you can remove the skin of the apples first, but I didnt. Cut the apples in pieces, you can make them as big as you want. Put them in a bowl and combine with the cinnamon and the remaining 50 grams of the sugar. Pour into the cake thin.

Roll out the remaining dough. Cut into strips of 2 cm and make a rhombus shape on the pie. Obviously, I didn't do that because I didn't have enough dough. Okay, I could have had enough if I made them thinner but oh well! Cover the dough with the egg yolk.

Bake the pie for 1 hour, until it looks nice and goldy. Make sure you put it a little lower than normal, or it will burn. As soon as it comes out, you can put on the apricot jam if you want, but I skipped that part. Let it cool completely (hardest.part.ever) and enjoy with a bunch of nice people and a cup of tea!
